Bringing my daughter and my grandson over next month and their flight from Kuala Lumpur gets into Don Mueang at ten past one in the morning. He is three. He will be asleep, or he will be awake and furious, there is no third option with that boy.
So what I want to know is what is actually still operating at that hour at DMK. I have only ever used that airport in daylight. Is there still a proper taxi queue running at one in the morning or does it thin out to nothing and you take whatever bloke walks up to you in the hall. And is there any late night surcharge on top that I should be expecting so nobody feels stitched up at the other end.
Hotel is over near Sukhumvit so it is a fair old run across the city. Happy to pre book a car if that is the sensible answer, I just do not want to pay over the odds out of panic.
The public taxi queue at DMK does run through the night, it is just quieter. You will not be standing in a hall with no options.
With a three year old asleep on your shoulder though I would honestly just book a car with a seat in it beforehand and be done. The whole value of a pre booked car is not the price, it is that you walk out and there is a bloke with a board and you get in. Doing a fare conversation at 1am with a toddler melting down is a special kind of hell.
Worth knowing the rail option is not it for you. There is a commuter rail service at Don Mueang but it does not run at one in the morning and it would not be the right shape for what you are doing anyway with a small child and bags. Nights at DMK are road only in practice.
Also DMK is the low cost carrier airport so a 1am arrival is completely normal there, it is not some dead deserted terminal. Half the flights land at silly hours.

Short answer first: yes, the official public taxi rank at Don Mueang operates around the clock, and at 1am you will normally have cars waiting rather than a queue of passengers waiting. So you have a real, supervised option and you do not have to accept the first person who approaches you inside the building.
What to expect on the fare. A taxi from an airport public taxi queue adds a 50 baht airport surcharge on top of the meter, and that is legitimate and posted. If your driver takes the expressway, and at that hour he will because it is empty and quick, the passenger pays the tolls, and he settles them at the booth as you go. Nothing else belongs on the bill for a normal run into town. There is no separate late night charge on a metered airport trip, so if somebody tells you there is, that is a negotiation, not a rule.
The one genuine complication for you is not the taxi, it is the child. Thai taxis do not carry child seats, and the rank cannot produce one for you. A booked car service can, if you ask for it when you book and confirm it, and that is the reason I would book rather than queue in your position, not the price. Bring your own if you can. I will not tell you what is right for your family, that is your call, but I would want a proper seat for a three year old on a fast empty expressway at 1am.
Practical bit if you do use the rank: it is downstairs on the transport level, follow the public taxi signs, not the people offering you a car in arrivals. That is the bit I had not thought about at all, the child seat. I assumed a taxi is a taxi. Right, booking a car and asking for a seat, and I will get them to confirm it in writing so there is no shrug at the kerb.
Follow on question while I have you. Is there any point them getting a Thai sim before they come out of the terminal at that hour, or is that a job for the morning? Only asking because if the booked car falls over I want them able to open an app rather than stand there.
Get the sim sorted at the airport, the counters in arrivals are open for the late flights and it takes ten minutes. It is exactly your fallback plan, if the booked car has not turned up you open an app and see a price and a car instead of standing there hoping.
One thing though, the app pickup at DMK is a designated pickup point, not the taxi rank, so they need to actually read where it is sending them rather than wandering out to the queue and getting confused. There is a bit on how that works in Grab in Thailand.
Also do not underestimate how quick that run is at half one in the morning. The same trip in Friday afternoon traffic is an hour and a half of misery and at that hour it can be half of it. Small mercy but it is a real one when there is a toddler involved.
Only thing I would add is have the hotel address written in Thai on a phone screen. Late shift drivers are not necessarily the ones with the best English and a printed address beats a conversation every time.
